Ingredients

  • 1 onion, finely sliced

  • 200 grams firm tofu, cubed
  • 150 grams shiitake mushrooms, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon vinegar
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 200 grams white rice, for serving

Method

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the sliced onion and sauté for 5 minutes until translucent.
  • Add the shiitake mushrooms and cook for an additional 5 minutes until they are tender.
  • Add the cubed tofu to the skillet and cook until the tofu is golden brown.
  • Stir in the red and green bell peppers and cook for another 3 minutes.
  • Add the diced tomato and cook until the tomato is softened, about 2 minutes.
  • Stir in the salt, pepper, vinegar, basil, oregano, thyme, cumin, paprika, and chili powder.
  • Reduce the heat to low and let the flavors meld for another 5 minutes.
  • Serve the tofu and Shiitake Mushroom Stir-Fry over a bed of white rice.

Tips

  • For a crispier tofu, press the tofu for 20 minutes before cubing to remove excess moisture.
