Ingredients

  • 1.5 kg sweet potatoes, peeled and cubed
  • 300 g peas
  • 2 large red peppers, chopped
  • 2 large green peppers, chopped
  • 3 large onions, finely chopped
  • 4 cloves garlic, minced
  • 300 g potatoes, peeled and cubed
  • 200 g cabbage, chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 1 tsp chili powder
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp ground ginger
  • 1.5 litres water

Method

  • Heat the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, and sauté until the onions are translucent.
  • Add the cumin, turmeric, curry powder, chili powder, coriander powder, paprika, ground ginger, and salt. Stir the spices for a minute to enhance their flavors.
  • Add the cubed sweet potatoes, potatoes, and chopped peppers to the pot. Stir well to coat the vegetables with the spices.
  • Pour in the water and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15 minutes.
  • Add the chopped cabbage and peas, and continue to simmer for another 10 minutes until the vegetables are tender and the flavors are well combined.
  • Adjust the seasoning with salt and spices as per your taste.
  • Once the curry is done, serve it hot with freshly chopped coriander leaves for garnish, if desired.

Tips

  • For an extra creamy texture, you can mash a small portion of the sweet potatoes in the pot.
  • Serve with basmati rice or naan for a complete meal.
  • For a bit of extra heat, add more chili powder or a chopped green chili.
