Ingredients

  • 1 Baguette (250g)
  • 200g Brie
  • 150g Grapes, halved
  • 2 Little Gem, leaves separated
  • 5 Radishes, thinly sliced
  • 1 Cucumber, thinly sliced
  • 1 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Dijon Mustard
  • 1 tsp Chopped Chives
  • 1 tsp Chopped Parsley
  • Salt and Pepper to taste

Method

  • Preheat your oven to 180°C and lightly toast the baguette for 5-7 minutes.
  • While the baguette is toasting, prepare your vegetables. Halve the grapes, thinly slice the radishes and cucumber, and separate the little gem leaves.
  • In a small mixing bowl, combine the olive oil, balsamic vinegar, Dijon mustard, chopped chives, and chopped parsley. Whisk until well combined, then season with salt and pepper to taste.
  • Once the baguette is lightly toasted, slice it into 4 equal portions. Carefully slice each portion open, ensuring you don’t cut all the way through.
  • Spread the Dijon mustard and olive oil mixture inside each baguette slice.
  • Layer each baguette with little gem leaves, cucumber slices, radishes, and halved grapes.
  • Top with slices of Brie, allowing the warmth of the baguette to lightly soften the cheese.
  • Serve the prepared baguette slices with a garnish of chopped parsley and chives.

Tips

For an added touch of French authenticity, you can lightly grill the Brie separately for a few minutes to melt to a delightful creaminess before adding it to the baguette. For a touch of zest, consider adding a few thinly sliced red onions.
