Ingredients

  • 100 grams Frankfurters, sliced
  • 2 Eggs
  • 100 grams Red peppers, sliced
  • 100 grams Mushrooms, sliced
  • 100 grams Carrots, julienned
  • 200 grams Cauliflower, riced
  • 2 grams Salt
  • 2 grams Pepper
  • 10 ml Soy Sauce
  • 10 ml Olive Oil
  • 2 grams Paprika
  • 2 grams Basil

Method

  • Preheat a large pan over medium heat and add the olive oil.
  • Once the oil is heated, add the sliced frankfurters and cook for about 3 minutes until they start to brown.
  • Remove the frankfurters from the pan and set aside.
  • In the same pan, add the red peppers, mushrooms, and carrots. Sauté for about 5 minutes until they soften.
  • Meanwhile, whisk the 2 eggs in a bowl with a pinch of salt and pepper.
  • Push the vegetables to one side of the pan and pour the eggs into the other side. Scramble the eggs until cooked, then mix them into the vegetables.
  • Add the riced cauliflower, cooked frankfurters, soy sauce, paprika, and basil to the pan. Stir well to combine all the ingredients.
  • Cook for another 5 minutes until the cauliflower rice is heated through and well mixed with the other ingredients.
  • Season with additional salt and pepper to taste, then serve hot.
