  • 15 grams cocoa powder
  • 2 grams salt

Method

  • Prepare the espresso and let it cool. Once cooled, stir in the rum or Marsala wine and set aside.
  • In a mixing bowl, whisk the egg yolks with the sugar until the mixture is pale and thick.
  • In a separate bowl, beat the mascarpone cheese until smooth and creamy.
  • Gently fold the egg yolk mixture into the mascarpone cheese until well combined.
  • In a clean bowl, whisk the egg whites with salt until stiff peaks form. Gradually fold the egg whites into the mascarpone mixture, being careful not to deflate the mixture.
  • Quickly dip each ladyfinger into the espresso mixture, ensuring they are not soaked for too long to avoid them becoming soggy.
  • In two dessert glasses or a small serving dish, layer the dipped ladyfingers and mascarpone mixture, starting with ladyfingers and ending with a layer of mascarpone.
  • Cover and refrigerate for at least 2 hours or until set.
  • Just before serving, sift the cocoa powder over the top for a finishing touch.

Tips

For the best flavors, allow the Tiramisu to refrigerate overnight. This will let the flavors meld beautifully.
