Serves: 2, Difficulty: Expert

Ingredients

  • 200 grams cremini mushrooms, sliced
  • 150 grams red cabbage, finely shredded
  • 100 grams potato chips, crushed
  • 200 grams potato chip pasta
  • 2 tablespoons hummus
  • 2 tablespoons ketchup
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried basil
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil

Method

  • Preheat your oven to 180°C and grease a pie dish with a bit of olive oil.
  • Heat 1 tablespoon of olive oil in a pan over medium heat. Add the sliced cremini mushrooms and shredded red cabbage. Sauté until the mushrooms are golden and the cabbage is softened, about 10 minutes.
  • Stir in the hummus, ketchup, onion powder, dried thyme, dried rosemary, and dried basil. Season with salt and pepper to taste. Cook for an additional 5 minutes to allow the flavors to meld.
  • In a separate pot, cook the potato chip pasta according to the package instructions until al dente. Drain and set aside.
  • Combine the pasta with the mushroom and cabbage mixture. Pour the mixture into the greased pie dish.
  • Sprinkle the crushed potato chips over the top of the mixture as a crunchy topping.
  • Place the pie dish in the preheated oven and bake for 20 minutes until the top is golden and bubbly.
  • Remove from the oven and allow to cool slightly before serving.

Tips

  • Using fresh thyme and rosemary can elevate the flavors. If available, use fresh herbs in the same quantities, finely chopped.
  • For a richer taste, consider adding a splash of oat milk to the mixture before baking.
