Ingredients

  • 2 grams of Thyme
  • 100 ml of Coconut Milk
  • 2 grams of Wasabi
  • 50 ml of Apple Cider
  • 10 grams of Molasses
  • 1 Lemon
  • 50 grams of Dragonfruit
  • 10 ml of Chilli Sauce
  • 100 ml of Almond Milk
  • 100 grams of Bean Thread
  • 50 grams of Tomato Puree
  • 10 grams of Durian
  • 2 grams of Salt
  • 2 grams of Black Pepper
  • 10 ml of Soy Sauce
  • 1 gram of Cumin
  • 1 gram of Paprika
  • 10 ml of Olive Oil
  • 100 grams of White Rice
  • 10 grams of Chives
  • 10 grams of Fresh Coriander

Method

  • Begin by soaking the bean thread noodles in warm water for 10 minutes, then drain and set aside.
  • In a saucepan, heat the olive oil over medium heat. Add the thyme, cumin, and paprika, and sauté for 2 minutes.
  • Add the tomato puree and sauté for another 3 minutes before incorporating the coconut milk and almond milk.
  • Mix in the wasabi, molasses, and chilli sauce, then let the mixture simmer for 10 minutes on low heat.
  • In a separate pan, cook the white rice in 200 ml of water with a pinch of salt. Once cooked, set aside.
  • Dice the dragonfruit and durian into bite-sized pieces and set aside.
  • Mix the cooked bean thread noodles into the coconut milk mixture, then fold in the dragonfruit and durian.
  • In a bowl, whisk the apple cider, soy sauce, and the juice from the lemon. Pour this over the medley and toss to combine.
  • Plate the rice, then spoon the vegetable medley on top.
  • Garnish with freshly chopped chives and coriander, then season with salt and pepper to taste.

Tips

Ensure all the fruit pieces are of even sizes to maintain a uniform texture. Adjust the wasabi and chilli sauce to taste for the perfect balance of heat and flavor. Fresh coriander and chives added at the end will elevate the dish with a burst of fresh, herby flavor.
