Ingredients

  • 300 grams of artichoke hearts
  • 2 peaches (approximately 400 grams)
  • 120 grams of marionberries
  • 200 grams of pasta (spaghetti or your choice)
  • 2 teaspoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 tablespoon of apple cider vinegar

Method

  • Begin by preparing the pasta. Bring a pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  • While the pasta is cooking, rinse and chop the artichoke hearts into bite-sized pieces.
  • Slice the peaches into thin wedges and set aside.
