Ingredients

  • 200g rice noodles
  • 200g shrimp
  • 2 eggs
  • 3 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 2 tbsp sugar
  • 1 lime, cut into wedges
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 1/4 cup peanuts, crushed
  • 1-2 fresh chilies, chopped
  • Fresh coriander for garnish
  • 2 tbsp olive oil

Method

  • Soak the rice noodles in warm water for 20-30 minutes, or until softened. Drain and set aside.
  • In a small bowl, mix the tamarind paste, fish sauce, and sugar until the sugar is dissolved.
  • Heat 1 tbsp of olive oil in a large pan or wok over medium-high heat. Add the minced garlic and chopped chilies, and stir-fry for 1-2 minutes until fragrant.
  • Add the shrimp to the pan and cook for 3-4 minutes until pink and cooked through. Remove the shrimp from the pan and set aside.
  • In the same pan, heat the remaining olive oil. Add the softened rice noodles and the tamarind sauce mixture, and stir to coat the noodles.
  • Push the noodles to one side of the pan and crack the eggs into the empty side. Scramble the eggs until cooked through, then mix with the noodles.
  • Add the cooked shrimp, bean sprouts, and crushed peanuts to the pan. Toss to combine all the ingredients.
  • Garnish with fresh coriander and serve immediately with lime wedges on the side.
