Serves: 2, Difficulty: Expert

Prep Time: 20 minutes, Cooking Time: 10 minutes

Ingredients

  • 50 grams rye bread, thinly sliced
  • 2 radishes, thinly sliced
  • 50 grams celery, finely chopped
  • 1 tablespoon almond butter
  • 1 tablespoon lime juice
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon salt
  • 1 teaspoon black pepper, freshly ground
  • 50 grams of water

Method

  • Preheat the oven to 180°C (355°F).
  • Thinly slice the rye bread and lightly toast it in the oven for about 10 minutes until crisp.
  • While the bread is toasting, thinly slice the radishes and finely chop the celery.
  • In a small bowl, mix the almond butter with lime juice until smooth. This will be the spread for the rye bread.
  • In a dry pan, toast the mustard seeds and celery seeds for 1-2 minutes until fragrant. Allow them to cool.
  • Once the rye bread is toasted, spread a thin layer of the almond butter and lime mixture on each slice.
  • Top each slice with a layer of sliced radish and chopped celery.
  • Sprinkle the toasted seeds, salt, and black pepper on top for a delightful crunch and flavor.
  • Serve immediately and enjoy this fresh, nutritious, and crisp German Macrobiotic starter.

Tips

  • For a more pronounced flavor, allow the almond butter and lime spread to sit for a few minutes before spreading it on the bread, to let the flavors meld.
  • Serve the rye bites with a light, fresh salad of mixed greens for an added touch of freshness.
