Serves: 2, Difficulty: Expert

Preparation: 45 minutes, Cooking: 30 minutes

Ingredients

  • 100 grams of Wild Rice
  • 8 pieces of Ravioli
  • 2 tablespoons of Almond Butter
  • 100 grams of Blueberries
  • 1 tablespoon of Cashew Nut Syrup
  • 1 tablespoon of Olive Oil
  • 1 teaspoon of Chili Powder
  • 1 teaspoon of Cinnamon
  • 1 tablespoon of Water

Method

  • Boil the wild rice in a medium pot with a dash of salt for 25 minutes or until tender. Drain and set aside to cool slightly.
  • In a medium bowl, combine the wild rice with the almond butter. Mix well until the rice is well-coated.
  • Carefully stuff the ravioli with the wild rice and almond butter mixture, ensuring not to overfill. Set aside.
  • In a small saucepan, combine the blueberries, cashew nut syrup, chili powder, cinnamon, and a tablespoon of water. Cook over medium heat, stirring occasionally until the blueberries are soft and the sauce is slightly thickened, approximately 10 minutes. Set aside.
  • Heat the olive oil in a medium skillet over medium heat. Sauté the stuffed ravioli in the skillet until golden and slightly crispy, approximately 3 minutes on each side.
  • To serve, divide the ravioli between two plates. Drizzle the spiced blueberry sauce over the ravioli. Garnish with a light sprinkle of chili powder if desired.

Tips

  • Ensure the wild rice is well-drained to avoid a soggy filling.
  • Stuff the ravioli gently to avoid breaking the pasta.
  • To enhance the flavors, consider adding a fresh herb garnish like chopped parsley or mint.
