  • 300 grams of plain flour
  • 75 grams of cocoa powder
  • 2 teaspoons of baking powder
  • 6 eggs
  • 300 grams of sugar
  • 750 ml of whipped cream
  • 300 ml of Kirsch (cherry liqueur)
  • 750 grams of cherries (pitted)
  • 200 grams of dark chocolate (grated)

Method

  • Preheat the oven to 180°C. Grease and line three 20cm round cake tins.
  • In a large mixing bowl, sift together the flour, cocoa powder, and baking powder.
  • In a separate bowl, whisk the eggs and sugar together until light and fluffy.
  • Gradually fold the sifted dry ingredients into the egg mixture until well combined.
  • Divide the batter evenly into the three prepared cake tins and smooth the tops.
  • Bake in the preheated oven for about 25-30 minutes, or until a skewer inserted into the center comes out clean.
  • Allow the cakes to cool in the tins for 10 minutes, then transfer to a wire rack to cool completely.
  • Once the cakes are cool, slice each cake horizontally to make 6 layers in total.
  • Brush each layer with Kirsch and add a few cherries.
  • Whip the cream until stiff peaks form, then fold in the Kirsch.
  • Layer the cakes with whipped cream and cherries, ensuring an even distribution.
  • Once the layers are assembled, cover the entire cake with the remaining whipped cream.
  • Scatter the grated dark chocolate over the cake and top with a few cherries for decoration.

Tips

  • Ensure the whipped cream is well chilled for a stable and fluffy texture.
  • For a more intense cherry flavor, marinate the cherries in Kirsch for a few hours.
  • Use a sharp knife to slice the cake layers evenly and smoothly.
