Ingredients

  • 4 sausages (Swiss-style, dairy-free)
  • 200 grams mushrooms, sliced
  • 4 eggs
  • 4 slices of bread
  • 2 tomatoes, sliced
  • 200 grams baked beans
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon thyme
  • 1 teaspoon parsley, chopped

Method

  • In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the sausages and cook for 10 minutes, turning occasionally, until they are browned and cooked through. Remove and set aside to stay warm.
  • In the same pan, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for 5 minutes until they are golden and tender. Add a pinch of salt and pepper to taste.
  • In a separate pot, warm the baked beans over low heat, stirring occasionally.
  • In another pan, heat a small amount of oil and cook the eggs to your preferred style (fried, scrambled, or poached). Add a pinch of salt, pepper, and thyme for seasoning.
  • While the eggs are cooking, toast the slices of bread until golden and crispy.
  • To assemble, place the sausages, mushrooms, and tomatoes onto serving plates. Add a portion of baked beans, and place the cooked eggs and toast alongside.
  • Garnish with chopped parsley and a grind of fresh pepper. Serve immediately.
