Ingredients
- 4 slices whole grain bread
- 150 grams mushrooms (sliced)
- 4 eggs

- Salt and pepper to taste
Method
- Preheat a non-stick pan over medium heat and add olive oil.
- Once the oil is heated, add sliced mushrooms and sauté until they are golden and tender, about 5 minutes.
- In a small bowl, whisk the eggs with a pinch of salt, pepper, and the teaspoon of Dijon mustard.
- Pour the egg mixture into the pan with the mushrooms, stirring gently to create a soft scramble.
- Toast the slices of whole grain bread until they are crisp and golden.
- Once the eggs are cooked to your preference, remove the pan from heat.
