Serves: 2, Difficulty: Expert

Preparation Time: 25 minutes, Cooking Time: 30 minutes

Ingredients

  • 500 grams Potatoes, peeled and grated
  • 50 grams Potato starch
  • 200 grams Ground pork
  • 1 Onion, finely chopped
  • 50 grams Bacon, diced
  • 200 grams Sour cream
  • 50 grams Butter
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon Olive Oil
  • 1 tablespoon Rosemary, finely chopped
  • 1 tablespoon Chives, chopped

Method

  • In a large bowl, combine the grated potatoes with potato starch. Season with salt and pepper, and mix well to form a batter.
  • In a skillet, heat olive oil and a bit of the butter. Scoop a tablespoon of the potato mixture and gently shape into a pancake. Fry until golden and crispy on both sides, about 3 minutes on each side. Repeat with the remaining batter.
  • In a separate pan, melt the remaining butter and add the diced bacon. Cook until crispy, then add the chopped onion and ground pork. Cook until the pork is browned and the onion is translucent. Season with rosemary, salt, and pepper.
  • In a small bowl, blend the sour cream with chopped chives and heat gently.
  • To serve, place the potato pancakes on a plate, top with the pork mixture, and a generous dollop of the creamy sour cream sauce on the side.

Tips

  • Ensure to squeeze out excess moisture from the grated potatoes with a clean dish towel for a crispier pancake.
  • Fresh rosemary and chives add a burst of flavor and fresh aroma, elevating the dish to a new level of taste.
