Ingredients

  • 400 grams Potatoes
  • 120 grams All-purpose flour
  • 30 grams Bryndza (sheep cheese)
  • 4 strips Bacon
  • 30 grams Sour cream
  • 1 teaspoon Salt
  • 1 teaspoon Chives (optional)

Method

  • Grate the potatoes and squeeze out excess moisture.
  • In a bowl, combine grated potatoes with all-purpose flour and salt. Mix to form a dough.
  • Bring a large pot of salted water to a boil. Scoop small dumplings of the dough and drop them into the boiling water. Boil until they float to the surface, about 5-7 minutes.
  • In a skillet, cook the bacon until crispy. Remove bacon, and set aside, reserving bacon fat.
  • In the same skillet, add the Bryndza cheese and sour cream to the bacon fat. Stir and cook until cheese is melted and creamy.
  • Drain the dumplings and add them to the skillet with the cheese sauce. Stir until dumplings are well coated.
  • Top with crispy bacon and sprinkle with chives for a fresh touch. Serve immediately.

Tips

  • For a creamier sauce, add a splash of water from the boiling dumplings to the cheese sauce.
  • If Bryndza is unavailable, substitute with sheep milk Feta for a similar taste.
