Ingredients

  • 250 grams of chicken, diced
  • 100 grams of peanut butter
  • 2 tomatoes, chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 1 sweet potato, diced
  • 2 tablespoons of palm oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of ginger (ground)
  • 1 tablespoon of tomato paste
  • 1/2 teaspoon of chili powder
  • 1 liter of water

Method

  • In a large pot, heat the palm oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  • Stir in the ginger and diced chicken, cooking until the chicken is browned on all sides.
  • Add the peanut butter, chopped tomatoes, tomato paste, and chili powder. Stir until the peanut butter is well combined with the other ingredients.
  • Pour in the water and bring the mixture to a simmer.
  • Add the diced carrots and sweet potatoes. Season with salt and black pepper.
  • Cover the pot and let it cook for 45-60 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
  • Adjust the seasoning to taste and serve hot.
