Ingredients

  • 300 grams chicken (breast or thigh), cut into chunks
  • 100 grams peanut butter
  • 2 medium tomatoes, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large carrot, sliced
  • 200 grams sweet potatoes, peeled and chopped
  • 2 tablespoons palm oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ginger (ground)
  • 1 teaspoon thyme
  • 2 cups (500 ml) water

Method

  • Heat palm oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the chicken chunks to the pot and cook until lightly browned.
  • Stir in the chopped tomatoes, ground ginger, and thyme, and cook for 5 minutes until the tomatoes start to break down.
  • Add the peanut butter, salt, and black pepper, and mix well.
  • Pour in the water and bring the stew to a simmer.
  • Add the sliced carrot and chopped sweet potatoes to the stew. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until the vegetables are tender and the sauce is rich and creamy.
  • Adjust seasoning with salt and pepper to taste. Serve hot, garnished with fresh thyme if desired.
