  • 300 grams tomatoes, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 20 grams fresh ginger, grated
  • 3 tablespoons palm oil
  • 1 teaspoon salt

Method

  • Stir in the tomato paste, ground peanuts, chopped tomatoes, ground coriander, and chili powder.
  • Return the chicken to the pot, and add salt, black pepper, and water. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, until the chicken is cooked through and the sauce is thickened.
  • While the Maafe is simmering, cook the basmati rice according to the package instructions.
  • Serve the Maafe over a bed of basmati rice, and enjoy the rich flavors of Malian cuisine.

Tips

For an extra depth of flavor, consider toasting the ground peanuts in a dry pan before adding them to the pot.
