Ingredients

  • 400 grams of goat meat
  • 100 grams of okra, sliced
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 4 tomatoes, chopped
  • 2 tablespoons of palm oil
  • 2 chili peppers, chopped
  • 2 tablespoons of tomato paste
  • Salt to taste
  • 1 teaspoon of black pepper
  • 1 teaspoon of ground ginger
  • 1 teaspoon of curry powder
  • 200 ml of water
  • 200 grams of basmati rice, cooked

Method

  • Heat the palm oil in a large pot over medium heat. Add the chopped onions and minced garlic, and sauté until the onions are translucent.
  • Add the goat meat and brown on all sides.
  • Mix in the tomatoes and tomato paste, and let simmer for 10 minutes.
  • Add the sliced okra, chili peppers, black pepper, ground ginger, curry powder, and salt. Stir to combine.
  • Pour in the water and bring to a boil. Once boiling, reduce the heat to a simmer, cover, and let the stew cook for 1.5 to 2 hours, or until the goat meat is tender.
  • Serve the stew over cooked basmati rice.
