Serves: 2, Difficulty: Expert

Preparation Time: 20 minutes, Cooking Time: 60 minutes

Ingredients

  • 300 grams Beef, thinly sliced
  • 200 grams Spinach, washed
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 medium Tomatoes, chopped
  • 20 grams fresh Ginger, grated
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Vinegar
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Coriander
  • 1 teaspoon Curry Powder
  • 200 grams Jasmine Rice

Method

  • In a large pan, heat the Olive Oil over medium heat. Sauté the Onion and Garlic until they are translucent and fragrant.
  • Add the thinly sliced Beef, Ginger, and Vinegar to the pan. Stir and cook until the beef is browned on all sides.
  • Incorporate the Tomatoes, Salt, Pepper, Dijon Mustard, Coriander, and Curry Powder. Stir well and let simmer for about 15 minutes to allow the flavors to meld.
  • Add the Spinach and let it wilt into the beef mixture. Stir occasionally and cook for another 5 minutes.
  • While the beef is simmering, cook the Jasmine Rice according to the package instructions.
  • Serve the Madagascan Beef and Greens over a bed of fragrant Jasmine Rice, ensuring equal portions for each plate.

Tips

  • For an added layer of flavor, marinate the Beef in the Vinegar and Dijon Mustard for 30 minutes before cooking.
  • Use a wooden spoon to gently stir the dish to prevent the beef from breaking into smaller pieces.
  • Pair this dish with a refreshing glass of white wine to balance the bold flavors.
