Ingredients

  • 500 grams of Potatoes
  • 100 grams of Plain Flour
  • 1 Egg (optional for a richer finish)
  • 2 grams of Salt
  • 100 grams of Bryndza (sheep cheese)
  • 100 grams of Bacon
  • 100 ml of Sour Cream
  • 2 grams of Pepper
  • 2 grams of Chives

Method

  • Peel and boil the potatoes in salted water until tender. Once cooked, drain and mash until smooth.
  • In a large bowl, combine the mashed potatoes, flour, and egg (optional). Season with salt and pepper. Knead the mixture into a dough.
  • Roll the dough into a log and cut into small, even pieces. Shape into small dumplings.
  • In a large pot of salted boiling water, cook the dumplings until they float, approximately 3-5 minutes. Remove and drain.
  • In a skillet, cook the bacon until crispy. Remove and set aside, preserving the bacon fat.
  • In the same skillet with bacon fat, add the dumplings and sauté until they take on a golden hue.
  • Lower the heat, add Bryndza cheese, and stir until the cheese is melted and coats the dumplings.
  • Remove from heat, stir in the sour cream, and combine well.
  • Top with crispy bacon and chopped chives. Serve immediately.
