Ingredients

  • 500 g Lamb, boneless
  • 4 g Cumin, ground
  • 4 g Coriander, ground
  • 2 g Cardamom, ground
  • 2 g Cinnamon, ground
  • 2 g Chili pepper, ground
  • 4 g Salt
  • 2 g Black pepper
  • 20 g Garlic, minced
  • 20 g Ginger, minced
  • 20 ml Olive oil
  • 10 g Fresh Coriander, chopped

Method

  • In a bowl, combine ground cumin, ground coriander, ground cardamom, ground cinnamon, ground chili pepper, salt, black pepper, minced garlic, and minced ginger.
  • Rub the spice mixture all over the boneless lamb, ensuring it is well-coated. Cover and refrigerate for at least 2 hours to marinate.
  • Preheat the oven to 160°C.
  • In a large oven-safe dish, place the marinated lamb and drizzle with olive oil.
  • Cover the dish with foil and roast in the oven for 4 hours, or until the lamb is tender and easily shredded with a fork.
  • Once cooked, garnish with freshly chopped coriander and serve with a side of your choice.
