Ingredients

  • 150 grams pork, thinly sliced
  • 30 grams pineapple, diced
  • 10 grams achiote paste
  • 1 clove garlic, minced
  • 20 grams onion, thinly sliced
  • 10 ml vinegar
  • 2 grams cumin
  • 2 grams paprika
  • 1 chili pepper, sliced
  • 1 gram salt
  • 2 corn tortillas
  • 3 grams cilantro, chopped (for garnish)
  • 1 wedge lime (for garnish)

Method

  • In a bowl, combine achiote paste, minced garlic, vinegar, cumin, paprika, chili pepper, and salt to create the marinade.
  • Add the pork to the marinade, ensuring each piece is well coated. Allow to marinate for at least 10 minutes.
  • While the pork marinates, prepare the onion and pineapple.
  • Heat a skillet over medium heat and add the marinated pork. Cook for about 10 minutes, stirring occasionally, until the pork is well browned.
  • Add the onion and pineapple to the skillet. Cook with the pork for an additional 10 minutes until the onion is soft and the pineapple is caramelized.
  • Warm the corn tortillas in a separate pan or microwave.
  • Once the pork mixture is ready, assemble the tacos by placing an equal portion of the pork, onion, and pineapple mixture onto each tortilla.
  • Garnish with cilantro and a squeeze of lime.

Tips

  • For an added kick, add a splash of your favorite North American hot sauce.
  • For a touch of creaminess, consider a small dollop of Greek yogurt on top.
