Ingredients

  • 400g Red kidney beans, canned
  • 200g Rice, Jasmine
  • 200ml Coconut milk
  • 100g Onion, finely chopped
  • 2 cloves of Garlic, minced
  • 2g Thyme, dried
  • 2g Black pepper
  • 2g Salt
  • 5ml Olive Oil
  • 2g Chili powder

Method

  • Rinse the rice in water until the water runs clear, then drain.
  • In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until they become translucent.
  • Add the rice into the pot, stirring continuously to toast it for about 2 minutes.
  • Pour in the coconut milk and 300ml of water. Add the kidney beans, thyme, chili powder, salt, and black pepper.
  • Stir the mixture gently and bring it to a boil. Once boiling, reduce to a simmer and cover the pot with a tight-fitting lid.
  • Let it simmer for 25 minutes, or until the rice is cooked and all the liquid is absorbed.
  • Remove the pot from heat, and let it sit for 5 minutes. Fluff the rice and beans with a fork before serving.
