Ingredients

  • 500g chicken pieces
  • 200g taro root, peeled and diced
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 200ml orange juice
  • 30g butter
  • Salt to taste
  • 1g black pepper
  • 1g nutmeg
  • 1g coriander
  • 1g thyme
  • 2g curry powder
  • 1g chili powder
  • 500ml chicken stock

Method

  • Heat butter in a large pan or pot, and sauté the onion and garlic until translucent.
  • Add the diced chicken to the pot, and brown on all sides.
  • Stir in tomatoes, taro root, and the spices: black pepper, nutmeg, coriander, thyme, curry powder, and chili powder. Mix well.
  • Pour orange juice and chicken stock over the chicken and taro. Mix until well combined.
  • Bring the mixture to a boil, then reduce the heat and let it simmer, covered, for 45 minutes until the taro is tender and chicken is cooked through.
  • Adjust the seasoning with salt according to taste.
  • Garnish with fresh coriander and serve hot.
