Ingredients

  • 300g Beef, cubed
  • 150g Cassareep (cassava extract)
  • 1 Onion, finely chopped
  • 3 Garlic cloves, minced
  • 1g Cinnamon
  • 2g Cloves
  • 2g Fresh thyme
  • 1 Hot pepper, finely chopped
  • 3g Salt
  • 3g Black pepper
  • 30ml Olive oil
  • 20g Tomato paste
  • 100g White rice

Method

  • Heat the olive oil in a large pot over medium-high heat. Add the beef and brown on all sides.
  • Remove the beef and set aside. In the same pot, add the onions and garlic, sautéing until caramelized.
  • Stir in the cassareep, cinnamon, cloves, thyme, hot pepper, and tomato paste.
  • Return the beef to the pot, and add 300ml of water. Season with salt and pepper.
  • Bring to a gentle boil, then reduce heat to a simmer. Cover and simmer for 2 hours, or until the beef is tender.
  • Cook the rice separately, following the package instructions. Serve the cassareep beef over a bed of rice.

  • For an even richer flavor, marinate the beef in cassareep and spices for an hour before cooking.
