Ingredients
- 300g Beef, cubed
- 150g Cassareep (cassava extract)
- 1 Onion, finely chopped
- 3 Garlic cloves, minced
- 1g Cinnamon
- 2g Cloves
- 2g Fresh thyme
- 1 Hot pepper, finely chopped
- 3g Salt
- 3g Black pepper
- 30ml Olive oil
- 20g Tomato paste
- 100g White rice
Method
- Heat the olive oil in a large pot over medium-high heat. Add the beef and brown on all sides.
- Remove the beef and set aside. In the same pot, add the onions and garlic, sautéing until caramelized.
- Stir in the cassareep, cinnamon, cloves, thyme, hot pepper, and tomato paste.
- Return the beef to the pot, and add 300ml of water. Season with salt and pepper.
- Bring to a gentle boil, then reduce heat to a simmer. Cover and simmer for 2 hours, or until the beef is tender.
- Cook the rice separately, following the package instructions. Serve the cassareep beef over a bed of rice.
