Serves: 2, Difficulty: Easy

Preparation time: 20 minutes, Cooking time: 40 minutes

Ingredients

  • 400 grams lamb, diced
  • 200 grams basmati rice
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 1.5 liters of water

Method

  • Heat oil in a large pot and sauté the chopped onion and minced garlic until the onion is translucent.
  • Add the diced lamb to the pot, and cook until browned on all sides.
  • Stir in the chopped tomatoes, cumin, cardamom, cinnamon, and salt. Cook until the tomatoes break down and the spices are aromatic.
  • Add the rice to the pot and stir to coat the rice with the spices.
  • Pour in the water and bring to a boil. Reduce the heat and let simmer, covered, until the rice is cooked and the lamb is tender, about 20 minutes.
  • Fluff the rice with a fork, and serve the dish warm.

Tips

  • For the best texture, ensure the rice is covered by about 1 cm of water during simmering.
  • Let the lamb rest in the pot for a few minutes after cooking for ultimate tenderness.
  • Garnish with chopped parsley or coriander for a fresh, vibrant touch.
