Ingredients
- 100 grams Basmati rice
- 150 grams chicken, cut into pieces
- 50 grams yogurt
- 1 small onion, sliced
- 2 cloves of garlic, minced
- 1 small piece of ginger, minced
- 1 green chili, chopped
- 2 pods of cardamom
- 1 small piece of cinnamon stick
- 1 bay leaf
- Pinch of saffron
- Salt to taste
- 15 grams ghee (clarified butter)
Method
- Rinse the Basmati rice under cold water and soak for 20 minutes, then drain.
- In a pot, heat ghee and sauté the sliced onion until golden brown. Remove half the onions and set aside for garnishing.
- Add minced garlic, ginger, green chili, cardamom, cinnamon, and bay leaf to the pot and sauté until aromatic.
- Add chicken pieces and cook until lightly brown. Mix in the yogurt and cook until the chicken is tender.
- Add rice to the pot and gently stir to coat the rice with the spices and yogurt.
- Dissolve saffron in a small amount of warm water and pour over the rice. Season with salt to taste.
- Add water to the pot, just enough to cover the rice and chicken. Bring to a boil, then cover and simmer over low heat until rice is cooked and water is absorbed, about 15 minutes.
- Fluff the rice with a fork, garnish with the reserved fried onions, and serve hot.
