Ingredients

  • 200g clams, rinsed and scrubbed
  • 150g celery, diced
  • 150g carrots, diced
  • 500ml fish stock
  • 200g potatoes, peeled and cubed
  • 150g bacon, diced
  • 150g turnip, peeled and cubed
  • 150g cabbage, chopped
  • 1 liter water
  • 2g salt
  • 1g black pepper
  • 5g fresh thyme, chopped
  • 20ml olive oil

Method

  • Heat olive oil in a large pot over medium heat. Add bacon and cook until golden and crispy, about 5 minutes.
  • Stir in celery, carrots, turnip, and potatoes. Cook for 5 minutes until vegetables begin to soften.
  • Pour in fish stock and water, then bring to a boil.
  • Reduce the heat to a simmer, then add clams and cabbage. Cover and cook for 15 minutes until clams open and vegetables are tender.
  • Season with salt, pepper, and thyme.
  • Serve hot, garnished with fresh thyme if desired.
