  • 2 tablespoons butter
  • 150g plain flour
  • 500ml milk
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon vegetable oil

Method

  • Preheat your oven to 180°C.
  • In a large pan, heat the olive oil and butter over medium heat. Add the chopped onion and sliced leeks, cooking until the leeks are soft.
  • Add the mushrooms to the pan and sauté for 5 minutes until softened.
  • Add the thyme, rosemary, salt, and pepper to the pan. Stir to combine.
  • In a separate pan, melt the butter and then stir in the flour to create a roux. Gradually add the milk, stirring continuously, to create a creamy sauce.
  • Add the grated cheddar cheese and Dijon mustard to the sauce, stirring until the cheese is well-melted and the sauce is smooth.
  • Combine the sauce with the vegetable mix, stirring well.
  • Transfer the mixture to a baking dish, smoothing the top.
  • Place in the oven for 20 minutes, until the top is golden and bubbly.
  • Serve piping hot, and enjoy the Welsh delight with a crisp green salad or crusty bread.
