Ingredients
- 1 medium aubergine
- 1 small onion, finely diced
- 1 small clove of garlic, minced
- 1 small red chili, finely chopped
- 1 medium tomato, chopped
- 1 small potato, diced
- 1 small celery stalk, diced
- 1 small courgette, diced
- 1 tablespoon olive oil
- 100 millilitres of water
- A pinch of salt
- A pinch of pepper
- A pinch of rosemary
- A pinch of thyme
Method
- Preheat the oven to 180°C.
- Cut the aubergine in half lengthwise and scoop out a portion of the flesh, leaving a small border to create a “boat.” Set the flesh aside.
- Heat olive oil in a pan over medium heat. Add the onion, garlic, and chili, and sauté for 3 minutes until the onion is softened.
- Add the chopped aubergine flesh, tomato, potato, celery, and courgette. Stir in the water and bring to a simmer.
- Season the mixture with salt, pepper, rosemary, and thyme. Cook for 10 minutes until the vegetables are tender and a bit saucy.
- Place the aubergine halves on a baking tray and fill them with the vegetable mixture.
- Bake in the oven for 15 minutes until the aubergine is tender and the top is slightly golden.
