Ingredients

  • 1 medium aubergine
  • 1 small onion, finely diced
  • 1 small clove of garlic, minced
  • 1 small red chili, finely chopped
  • 1 medium tomato, chopped
  • 1 small potato, diced
  • 1 small celery stalk, diced
  • 1 small courgette, diced
  • 1 tablespoon olive oil
  • 100 millilitres of water
  • A pinch of salt
  • A pinch of pepper
  • A pinch of rosemary
  • A pinch of thyme

Method

  • Preheat the oven to 180°C.
  • Cut the aubergine in half lengthwise and scoop out a portion of the flesh, leaving a small border to create a “boat.” Set the flesh aside.
  • Heat olive oil in a pan over medium heat. Add the onion, garlic, and chili, and sauté for 3 minutes until the onion is softened.
  • Add the chopped aubergine flesh, tomato, potato, celery, and courgette. Stir in the water and bring to a simmer.
  • Season the mixture with salt, pepper, rosemary, and thyme. Cook for 10 minutes until the vegetables are tender and a bit saucy.
  • Place the aubergine halves on a baking tray and fill them with the vegetable mixture.
  • Bake in the oven for 15 minutes until the aubergine is tender and the top is slightly golden.
  • Let it cool slightly before serving.

  • For a burst of freshness, garnish with chopped fresh parsley before serving.
