Ingredients

  • 200 grams of Squash, cubed
  • 2 tablespoons of BBQ sauce
  • 1 Avocado, diced
  • 50 grams of pecan, chopped
  • 1 tablespoon of margarine
  • 1 tablespoon of lime juice
  • 1 habanero chili, finely chopped
  • 200 grams of coleslaw
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of coriander
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika

Method

  • Preheat your oven to 200°C.
  • In a bowl, mix the cubed squash with olive oil, cumin, coriander, salt, and pepper. Spread on a baking sheet and roast for 25 minutes until tender.
  • In a small saucepan, melt the margarine and mix in the BBQ sauce and chopped habanero chili. Simmer for 5 minutes, then set aside.
  • In a large bowl, combine the diced avocado, chopped pecan, lime juice, and paprika. Mix gently.
  • Once the squash is roasted, add it to the avocado and pecan mix. Stir gently to combine.
  • Divide the coleslaw between two plates, then add the squash and avocado mix on top.
  • Drizzle with the BBQ sauce and habanero mix.
  • Garnish with a sprinkle of paprika and serve warm.
