Ingredients

  • 400g lamb, diced
  • 3 garlic cloves, minced
  • 30g butter
  • 150g basmati rice
  • 200g yogurt
  • 2 large eggs
  • 200g plain flour
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 tablespoon olive oil
  • 500ml water

Method

  • In a pot, melt 15g of butter and sauté 2 minced garlic cloves until fragrant.
  • Add the lamb, oregano, rosemary, salt, and pepper. Brown the lamb on all sides.
  • Add 400ml of water, cover, and simmer for 1.5 hours until the lamb is tender.
  • In a separate pot, melt the remaining butter, sauté the remaining garlic, then stir in the rice. Add 100ml water, salt, and bring to a boil. Reduce heat to low, cover, and simmer until the rice is tender and water is absorbed.
  • In a bowl, mix yogurt, eggs, and flour to form a smooth paste, season with salt and pepper.
  • Preheat the oven to 180°C. In a baking dish, layer the cooked lamb, then cover with the yogurt mixture.
  • Bake for 30 minutes until the yogurt is bubbly and golden.
