Ingredients

  • 300 grams chicken, cut into pieces
  • 50 ml palm oil
  • 200 grams okra, sliced
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 medium tomatoes, chopped
  • 200 grams butternut squash, diced
  • 1 chili pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon turmeric
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 300 ml water

Method

  • Heat the palm oil in a large pot over medium heat. Add the chicken pieces and brown on all sides. Remove and set aside.
  • In the same pot, add the garlic, onion, and chili pepper. Sauté until the onion becomes translucent.
  • Stir in the tomatoes, butternut squash, turmeric, thyme, and bay leaves. Cook for 5 minutes until the tomatoes start to break down.
  • Return the chicken to the pot and add water. Bring to a simmer, cover, and let it cook for 30 minutes.
  • Add the sliced okra, salt, and black pepper. Cook for another 20 minutes, until the chicken is cooked through and the okra is tender.
  • Adjust seasoning to taste and serve hot.
