  • 250 grams Gruyère cheese, grated
  • 1 baguette, sliced
  • Salt to taste
  • Pepper to taste

Method

  • In a large pot, melt the butter over medium heat.
  • Add the thinly sliced onions and cook, stirring frequently, until caramelized, about 25 minutes.
  • Stir in the minced garlic and cook for another 2 minutes.
  • Sprinkle the flour over the onions and cook, stirring constantly, for about 3 minutes to remove the raw flour taste.
  • Pour in the white wine and beef broth, stirring to combine.
  • Add the thyme and bay leaves, and season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes, stirring occasionally.
  • While the soup is simmering, preheat your oven to 200°C.
  • Place the baguette slices on a baking sheet and toast them in the oven for 5 minutes.
  • Remove the bay leaves from the soup and ladle the soup into oven-safe bowls.
  • Place a toasted baguette slice on top of each bowl of soup and sprinkle generously with grated Gruyère cheese.
  • Place the bowls on a baking sheet and broil in the oven until the cheese is bubbly and golden, about 5 minutes.
