Ingredients

  • 500 grams pork shoulder, cubed
  • 50 ml lime juice
  • 2 scotch bonnet peppers, finely chopped
  • 4 garlic cloves, chopped
  • 1 onion, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon cloves, ground
  • 50 ml white vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 200 ml vegetable oil, for frying
  • 2 tablespoons tomato paste
  • 100 grams white rice

Method

  • In a large bowl, combine pork, lime juice, scotch bonnet peppers, garlic, onion, thyme, cloves, vinegar, salt, and black pepper. Mix well and marinate for 1 hour in the refrigerator.
  • Preheat your oven to 175°C. Transfer the marinated pork to a baking dish, cover with foil, and bake for 90 minutes.
