Ingredients

  • 300g Basmati rice
  • 250g Chicken, boneless, skinless, and cut into pieces
  • 100g Yogurt
  • 100g Onion, thinly sliced
  • 3 cloves of Garlic, minced
  • 15g Ginger, minced
  • 1 Green chili, sliced
  • 2 Cardamom pods
  • 5g Cinnamon stick
  • 1 Bay leaf
  • 1g Saffron threads, soaked in 20ml warm water
  • 5g Salt
  • 5g Coriander, for garnish
  • 500ml water

Method

  • In a bowl, marinate the chicken with yogurt, garlic, ginger, and salt. Allow it to rest for 15 minutes.
  • In a large pot, heat some oil and sauté the sliced onions until golden brown. Remove half for garnish.
  • Add the marinated chicken to the pot and cook until it is seared and the mixture is aromatic.
  • Add the cardamom, cinnamon, and bay leaf, and cook for an additional 2 minutes to release the spices’ flavors.
  • Add the Basmati rice and 500ml of water to the pot with the chicken. Stir well.
  • Cover and simmer for 20 minutes on low heat until the rice is cooked and the chicken is tender.
  • Drizzle the soaked saffron water over the rice and gently fold it in.
  • Garnish with the reserved fried onions and freshly chopped coriander.
  • Serve hot with a cooling yogurt raita.

Tips

  • For an even more vibrant flavor, allow the marinated chicken to rest for an additional 10 minutes.
  • Gently fold the rice to prevent it from becoming mushy.
