Ingredients

  • 200 grams of Calasparra rice
  • 200 grams of chicken, cut into pieces
  • 100 grams of rabbit, cut into pieces
  • 100 grams of shrimp, peeled and deveined
  • 100 grams of mussels, cleaned
  • 100 grams of clams, cleaned
  • 200 grams of green beans, cut into pieces
  • 2 ripe tomatoes, diced
  • 2 grams of saffron threads
  • 2 grams of smoked paprika
  • 3 garlic cloves, minced
  • 30 ml of olive oil
  • Pinch of salt
  • Pinch of pepper
  • 2 bay leaves
  • 1 liter of water

Method

  • Heat olive oil in a wide, shallow pan over medium heat. Add chicken and rabbit pieces, and sauté until golden.
  • Stir in garlic and bay leaves, cooking until the garlic is fragrant.
  • Mix in diced tomatoes and smoked paprika, cooking until the tomatoes begin to soften.
  • Sprinkle in Calasparra rice, saffron, and salt and pepper, stirring to coat the rice with the flavors.
  • Pour in water, bringing the mixture to a gentle boil. Cook for 15 minutes, stirring occasionally.
  • Spread green beans, shrimp, mussels, and clams on top of the rice. Cover, and cook for another 10 minutes, until seafood is done, and rice is tender.
  • Remove from heat and let the paella rest for 5 minutes. Remove bay leaves before serving.

Tips

  • Achieve the perfect “socarrat,” the crispy rice crust at the bottom of the pan, by allowing the paella to sit for a minute over medium heat just before serving.
  • If saffron is unavailable, a little turmeric can be used to achieve a similar golden hue, though the distinct saffron flavor is unmatched.
