Ingredients
- 200 grams rice noodles
- 200 grams shrimp, peeled and deveined
- 2 eggs
- 100 grams bean sprouts
- 2 cloves garlic, minced
- 30 ml tamarind paste
- 30 ml fish sauce
- 30 grams peanuts, crushed
- 2 green onions, chopped
- 1 lime, cut into wedges
- 15 ml olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
Method
- Soak the rice noodles in warm water for 15 minutes, then drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp to the pan and cook until pink and curled, about 3 minutes. Remove shrimp and set aside.
- In the same pan, crack in the eggs and scramble until just set.
- Add the drained noodles, tamarind paste, fish sauce, sugar, and a pinch of salt and pepper. Toss to combine.
- Return the shrimp to the pan, and add the bean sprouts and half of the green onions. Toss everything together for 2-3 minutes until heated through.
- Transfer the Pad Thai to serving plates, and garnish with crushed peanuts, the remaining green onions, and lime wedges.
