Ingredients

  • 150 grams all-purpose flour
  • 150 grams sugar
  • 100 grams unsalted butter
  • 2 eggs
  • 100 ml oat milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 100 grams desiccated coconut
  • 100 grams sugar (for coating)
  • 30 grams cocoa powder
  • 50 grams unsalted butter (for coating)

Method

  • Preheat the oven to 180°C (350°F) and grease a square baking pan.
  • In a medium bowl, sift together all-purpose flour and baking powder. Set aside.
  • In a large bowl, beat 100 grams of unsalted butter and 150 grams of sugar until the mixture is light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add in the flour mixture, alternating with the oat milk, beginning and ending with the flour mixture. Mix until just combined.
  • Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Once the cake is cool, cut it into 16 squares.
  • For the coating: In a medium saucepan, sift together cocoa powder and 100 grams of sugar. Add in 50 grams of unsalted butter and 100 ml of water. Stir continuously until the mixture is smooth and comes to a boil. Remove from heat and cool slightly.
  • Dip each cake square into the cocoa mixture, ensuring it is completely covered. Roll each dipped square in desiccated coconut, coating all sides.
  • Place the Lamingtons on a wire rack to set.

  • For a richer flavor, add a pinch of salt to the batter.
  • Ensure the cake is completely cool before coating to prevent it from crumbling.
  • Let the Lamingtons set for at least 30 minutes before serving to allow the coating to firm up.
