  • Green bananas: 4, peeled
  • Green figs: 4, peeled

  • Bell peppers: 1, 100 grams, sliced
  • Tomatoes: 2, 100 grams, chopped
  • Thyme: 1 teaspoon
  • Salt: 2 teaspoons
  • Black pepper: 1 teaspoon
  • Vegetable oil: 2 tablespoons
  • Chili powder: 1 teaspoon
  • Tomato paste: 1 tablespoon

Method

  • Begin by soaking the saltfish in water overnight, to remove excess salt. Drain and flake the saltfish into a pan.
  • Boil the green bananas and figs in salted water for 15 minutes or until tender. Drain and set aside.
  • In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until fragrant.
  • Stir in the bell peppers, tomatoes, and flaked saltfish. Cook until the vegetables are tender, about 10 minutes.
  • Add thyme, salt, black pepper, and chili powder. Stir in the tomato paste and cook for an additional 5 minutes.
  • Serve the saltfish and vegetable mixture over the boiled green bananas and figs. Garnish with additional thyme if desired.
