Ingredients

  • 200g ground beef
  • 50g onion, diced
  • 2 cloves of garlic, minced
  • 150g tomatoes, diced
  • 100g ground peanuts (or peanut butter)
  • 2 tbsp palm oil
  • 1 chili pepper, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp ground ginger
  • 200ml water

Method

  • Heat the palm oil in a large pan over medium-high heat. Sauté the diced onion and minced garlic until the onion is translucent.
  • Add the ground beef and cook until it is browned and cooked through.
  • Stir in the chili pepper, chili powder, and ground ginger, cooking for 2 minutes for the spices to release their aroma.
  • Add the tomatoes, ground peanuts, water, salt, and black pepper. Stir to combine.
  • Reduce the heat to low and let the stew simmer for 30 minutes until it thickens to a desired consistency.
  • Adjust the seasoning with salt and pepper to taste, and let it simmer for another 5 minutes.
