Infused with a delicate blend of spices, this meal is as nourishing as it is satisfying, ensuring that you and your breakfast companion start the day on a high note.

Ingredients

  • 4 large eggs
  • 50 grams of cheddar cheese, shredded
  • 50 grams of spinach, chopped
  • 150 grams of chicken breast, cooked and shredded
  • 2 tablespoons of mayonnaise
  • 1 medium tomato, sliced
  • 1 medium carrot, cut into sticks
  • 1 medium celery stalk, cut into sticks
  • 1 tablespoon of butter
  • 1 tablespoon of vegetable oil
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste

Method

  • Beat the eggs in a medium bowl and season with a pinch of salt and pepper.
  • Heat a tablespoon of vegetable oil in a non-stick pan over medium heat.
  • Pour the eggs into the pan and let them cook, running a spatula around the edge to let the uncooked eggs flow to the edge.
  • Once the eggs start to set, add the shredded cheddar cheese and chopped spinach over one half of the omelette.
  • Fold the omelette in half and let it cook for another minute until the cheese is melted and spinach is wilted. Then, transfer to a plate and keep warm.
  • In the same pan, add the butter and heat until it melts. Then, add the cooked and shredded chicken breast and stir in the soy sauce. Heat thoroughly for about 2 minutes.
  • In a small bowl, mix the mayonnaise with a pinch of salt and pepper. Spread the mayonnaise on the sliced tomato and assemble the plate.
  • Serve the omelette warm with a side of chicken, tomato, carrot sticks, and celery sticks.

Tips

  • For a fluffier omelette, you can add a tablespoon of milk to the beaten eggs.
  • Serve with a side of your favorite hot sauce for a spicy kick.
  • Ensure the chicken breast is cooked and shredded before you start the omelette for a quick assembly.
