Ingredients
- 200 grams Chickpeas, cooked
- 1 Red Pepper, sliced
- 1 Green Pepper, sliced
- 1 Onion, thinly sliced
- 2 cloves Garlic, minced
- 1 teaspoon Fresh Ginger, grated
- 200 grams Tomatoes, chopped
- 200 grams Tinned Tomatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Turmeric
- 2 tablespoons Soy Sauce
- 1 teaspoon Coriander
- 1 teaspoon Vinegar
Method
- Heat the Olive Oil in a large pan over medium heat.
- Add the sliced Onions, minced Garlic, and grated Ginger. Sauté for a few minutes until the Onions become translucent.
- Add the sliced Red and Green Peppers, and stir-fry for about 5 minutes until they start to soften.
- Add the chopped Tomatoes and Tinned Tomatoes to the pan. Stir well to combine.
- Season with Salt, Pepper, Cumin, Paprika, and Turmeric. Stir to ensure the spices are well distributed.
- Add the cooked Chickpeas to the pan. Stir to mix all the ingredients well.
- Pour in the Soy Sauce and Vinegar, and sprinkle with Coriander. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
- Serve hot, garnished with a sprinkle of fresh Coriander if desired.
