Ingredients

  • 200 grams Chickpeas, cooked
  • 1 Red Pepper, sliced
  • 1 Green Pepper, sliced
  • 1 Onion, thinly sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh Ginger, grated
  • 200 grams Tomatoes, chopped
  • 200 grams Tinned Tomatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Turmeric
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Coriander
  • 1 teaspoon Vinegar

Method

  • Heat the Olive Oil in a large pan over medium heat.
  • Add the sliced Onions, minced Garlic, and grated Ginger. Sauté for a few minutes until the Onions become translucent.
  • Add the sliced Red and Green Peppers, and stir-fry for about 5 minutes until they start to soften.
  • Add the chopped Tomatoes and Tinned Tomatoes to the pan. Stir well to combine.
  • Season with Salt, Pepper, Cumin, Paprika, and Turmeric. Stir to ensure the spices are well distributed.
  • Add the cooked Chickpeas to the pan. Stir to mix all the ingredients well.
  • Pour in the Soy Sauce and Vinegar, and sprinkle with Coriander. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
  • Serve hot, garnished with a sprinkle of fresh Coriander if desired.

Tips

  • For a deeper flavor, allow the dish to simmer for an additional 5-10 minutes.
