Ingredients

  • 100 grams Basmati rice
  • 150 grams chicken, cut into pieces
  • 50 grams yogurt
  • 1 small onion, sliced
  • 2 cloves of garlic, minced
  • 1 small piece of ginger, minced
  • 1 green chili, chopped
  • 2 pods of cardamom
  • 1 small piece of cinnamon stick
  • 1 bay leaf
  • Pinch of saffron
  • Salt to taste
  • 15 grams ghee (clarified butter)

Method

  • Rinse the Basmati rice under cold water and soak for 20 minutes, then drain.
  • In a pot, heat ghee and sauté the sliced onion until golden brown. Remove half the onions and set aside for garnishing.
  • Add minced garlic, ginger, green chili, cardamom, cinnamon, and bay leaf to the pot and sauté until aromatic.
  • Add chicken pieces and cook until lightly brown. Mix in the yogurt and cook until the chicken is tender.
  • Add rice to the pot and gently stir to coat the rice with the spices and yogurt.
  • Dissolve saffron in a small amount of warm water and pour over the rice. Season with salt to taste.
  • Add water to the pot, just enough to cover the rice and chicken. Bring to a boil, then cover and simmer over low heat until rice is cooked and water is absorbed, about 15 minutes.
  • Fluff the rice with a fork, garnish with the reserved fried onions, and serve hot.

Tips

  • For an added burst of flavor, soak the saffron in warm milk for a few minutes before adding.
  • Ensure to not overcook the rice for the perfect Biryani texture.
