Ingredients

  • 400 grams beef steak
  • 2 medium carrots, 100 grams
  • 100 grams parsnips
  • 100 grams celery root
  • 1 medium onion, 80 grams
  • 2 cloves garlic
  • 2 bay leaves
  • 30 grams plain flour
  • 100 ml sour cream
  • 1 lemon
  • 10 grams sugar
  • 30 ml white vinegar
  • 50 grams butter
  • Salt
  • Black pepper

Method

  • Season the beef steak with salt and pepper. In a large pan, melt the butter and sear the steak for 3-4 minutes on each side. Remove and set aside.
  • In the same pan, add the onion, garlic, carrots, parsnips, and celery root. Sauté until the vegetables soften, about 10 minutes.
  • Stir in the flour and cook for 2 minutes. Add the bay leaves, sugar, vinegar, the juice of the lemon, and 200 ml of water to the pan. Stir well.
  • Return the beef steak to the pan. Cover and simmer on low heat for 1.5 hours, until the beef is tender.
  • Once the beef is cooked, remove the steak and bay leaves. Blend the vegetable mixture until smooth, then stir in the sour cream. Adjust seasoning with salt and pepper to taste.
  • Return the steak to the creamy sauce and simmer for an additional 5 minutes to heat through.
  • Serve the steak sliced on a plate with the rich, creamy sauce drizzled on top.
