French Chicken Coq au Vin

Ingredients

  • 300 grams of Chicken, cut into pieces
  • 150 ml of Red wine
  • 50 grams of Bacon or pancetta, diced
  • 100 grams of Onions, sliced
  • 2 cloves of Garlic, minced
  • 100 grams of Carrots, diced
  • 100 grams of Mushrooms, sliced
  • 25 grams of Butter
  • 20 grams of Plain Flour
  • 2 sprigs of Thyme
  • 2 Bay leaves
  • Salt, to taste
  • Pepper, to taste
  • 100 ml of Water

Method

  • In a large pan, melt the butter and sauté the diced bacon or pancetta until crispy. Remove and set aside.
  • In the same pan, brown the chicken pieces on all sides. Remove and set aside with the bacon.
  • Add the sliced onions and minced garlic to the pan, sauté until the onions turn translucent.
  • Stir in the flour and cook for a minute to remove the raw taste.
  • Slowly pour in the red wine and water, stirring continuously to avoid lumps.
  • Add the carrots, mushrooms, thyme, bay leaves, and the sautéed bacon and chicken back into the pan.
  • Season with salt and pepper to taste.
  • Allow the mixture to simmer on low heat for 90 minutes, or until the chicken is tender and the sauce has thickened.
  • Serve hot with your choice of sides.
