Ingredients

  • 300 g pork belly
  • 100 g chorizo, sliced
  • 200 g red beans, soaked overnight
  • 100 g white rice
  • 2 plantains, sliced
  • 1 avocado, sliced
  • 2 arepas
  • 2 eggs
  • 1 tbsp olive oil
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh coriander for garnish

Method

  • Preheat the oven to 180°C. Toss the pork belly and chorizo with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast for 1.5 hours until crispy and succulent.
  • In a pot, cook the soaked red beans with salt until tender.
  • In a separate pot, cook the white rice. Fluff with a fork and set aside.
  • In a frying pan, cook the plantains with a dash of olive oil until golden brown.
  • Prepare the avocado salad with sliced avocado, seasoned with vinegar and soy sauce.
  • In a separate pan, fry the arepas and cook the eggs sunny-side up.
  • Plate the dish with a serving of pork belly, chorizo, red beans, rice, plantains, and a fresh arepa, topped with a sunny-side-up egg and a garnish of fresh coriander.
