Ingredients

  • 200 grams of cauliflower, florets
  • 100 grams of mushrooms, sliced
  • 100 grams of courgettes, sliced
  • 200 grams of cheese, grated
  • 200 ml of milk
  • 100 grams of flour
  • 50 grams of butter
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon of chia seeds

Method

  • Preheat the oven to 200°C.
  • Steam the cauliflower florets until tender but not mushy, approximately 5-7 minutes. Set aside.
  • In a medium saucepan, melt the butter over medium heat. Add the flour to the butter and stir continuously to form a roux, cooking for about 2 minutes.
  • Slowly add the milk to the roux, whisking continuously to avoid any lumps. Continue to cook the sauce until it thickens, about 5 minutes.
  • Once thickened, add 150 grams of the grated cheese, stirring until it is fully melted and incorporated into the sauce. Season with salt and pepper to taste.
  • In a large ovenproof dish, layer the cauliflower florets, mushrooms, and courgette slices.
  • Pour the cheese sauce over the vegetables, ensuring all are well-coated.
  • Sprinkle the remaining 50 grams of grated cheese on top of the dish, along with a tablespoon of chia seeds for a delightful crunch.
  • Bake in the preheated oven for 20-25 minutes, or until the top is golden and the sauce is bubbling.
  • Allow to cool for a few minutes before serving to enjoy the perfect blend of creamy and crunchy textures.

Tips

  • For a deeper flavor, try roasting the mushrooms and courgettes before adding them to the dish.
  • Use a blend of your favorite cheeses for a unique taste profile.
  • Allow the dish to rest for a few minutes before serving to set the sauce perfectly.
